Ingredients
Original recipe (2 servings) → 2 servings
- •1 tbsp butter
- •2 cups cauliflower florets
- •2 tbsp cheese
- •1 tbsp extra virgin olive oil
- •5 cloves garlic
- •6 ounces pasta
- •2 pinches couple of pepper flakes
- •2 servings salt and pepper
- •3 scallions
- •2 tbsp white wine
- •0.3 cup bread crumbs
Directions
Preheat oven to 350°F (175°C).
Bring a large pot of salted water to a boil.
In a large skillet, melt the butter over medium heat.
Add the cauliflower florets to the skillet and cook until they start to brown, about 5-7 minutes.
Meanwhile, cook the pasta in the boiling water according to package instructions until al dente. Drain and set aside.
Add the minced garlic, sliced scallions, and red pepper flakes to the skillet with the cauliflower. Cook for 1-2 minutes until fragrant.
Deglaze the skillet with the white wine, scraping up any browned bits from the bottom.
Add the cooked pasta to the skillet and toss to combine. Season with salt and pepper to taste.
In a separate small skillet, heat the olive oil over medium heat. Add the breadcrumbs and toast until golden brown, about 3-4 minutes.
Remove the skillet from heat and stir in the grated cheese until melted.
Serve the pasta topped with the toasted breadcrumbs and extra cheese, if desired.
